- Using a knife, butterfly chicken. Open out flat. Place chicken between 2 sheets baking paper. Using a rolling pin, pound chicken to flatten slightly. Layer mozzarella, mint and garlic on 1 half of each fillet. Season with salt and pepper. Fold chicken over to enclose filling. Wrap fillets with zucchini and prosciutto.
- Heat oil in a large, non-stick frying pan over medium heat. Cook chicken for 10 minutes, turning halfway, or until browned and cooked through. Serve with potatoes and beans.
