Cut some corners in this quick and easy cheat’s recipe for golden baked chicken parmigiana.
- Place oil, chopped tomato and garlic in a medium non-stick frying pan over high heat. Bring to the boil. Reduce heat to medium and simmer, stirring occasionally, for 7 mins or until tomato breaks down and sauce thickens. Stir in chopped basil.
- Preheat oven to 220C. Line a baking tray with baking paper. Wrap 1 slice of prosciutto around each piece of chicken. Place on prepared tray and spray with oil. Bake for 15 mins. Top with tomato mixture and mozzarella. Bake for a further 10 mins or until chicken is cooked through and mozzarella is golden. Serve with salad, halved tomato and bread and top with basil leaves.
