Create a perfectly succulent pork roast on the barbecue with this Mexican-inspired recipe.
- Preheat a covered barbecue on high. (Alternatively, preheat oven to 230°C.)
- Combine paprika, cumin, garlic powder, coriander, oregano and salt in a small bowl. Rub all over pork. Place pork in a disposable baking tray. Cook pork, using indirect heat, in a covered barbecue for 30 mins. Reduce heat to low or 160°C. Roast in covered barbecue using indirect heat, or in oven, for 1 hour 30 mins or until cooked through.
- Transfer pork to a plate and cover with foil. Set aside for 20 mins to rest. Serve with salad leaves.
