Try our Pork with cider and mustard sauce - its delicious, versatile and easy on the purse!
- Combine mustard and half the oil in a shallow ceramic dish. Add pork. Turn to coat. Place apple in a bowl. Add sugar. Toss to coat.
- Cook potato in a large saucepan of boiling, salted water for 10 minutes or until tender. Drain. Return to pan. Mash until smooth. Add milk and butter. Season with salt and pepper. Stir to combine.
- Heat remaining oil in a large, deep frying pan over medium-high heat. Add apple. Cook for 3 minutes or until lightly browned. Add pork. Cook for 3 to 5 minutes each side or until pork is cooked through and apple is tender. Transfer pork and apple to a plate. Cover to keep warm.
- Make sauce Place cider and onion in a saucepan over medium-high heat. Bring to the boil. Reduce heat to low. Simmer for 5 minutes or until reduced by half. Add cream and mustard. Simmer for 3 to 5 minutes or until reduced by half.
- Divide pork mixture between plates. Top with sauce. Serve with mash and broccolini.
