Coconut, walnuts and peanut butter are a winning combo and these no-cook, gluten-free mouthfuls are bliss in a bite.

  1. Melt the butter in a medium saucepan over low heat. Add the sugar, coconut, walnut and peanut butter and stir until well combined.
  2. Roll 2-teaspoonsful quantities of mixture into balls and place on a plate. Place extra coconut on a plate and lightly roll each ball in the coconut to lightly coat. Place on a plate and cover with plastic wrap. Place in the fridge for 30 minutes or until firm.
