Perfect for a crowd of sweet-tooths, these bite-size cocoa cookies are topped with a nugget of melt-in-your-mouth peanut butter cup candy!
- Beat sugar, shortening, and butter in large mixing bowl until creamy. Beat in egg; stir in buttermilk and vanilla.
- In another bowl, sift together flour, cocoa, baking soda, and salt; stir into batter. Cover and refrigerate 1 hour.
- Preheat oven to 350ºF. Coat baking sheets with cooking spray.
- Drop dough by teaspoon-fuls 2" apart. Bake 8-10 minutes.
- While cookies are still warm, press chunk of peanut butter cup into center of each, being careful not to push all the way through the cookie.
