Serve up this tasty rice dish in 3 simple steps.
- Place oil, butter, onion and garlic into a 2-litre capacity heatproof, microwave-safe bowl. Cook, uncovered, on HIGH (100%) power for 3 minutes or until onion is tender.
- Add rice, stock and saffron. Cover with a lid or double layer of plastic wrap. Cook, covered, on MEDIUM (50%) power for 15 minutes or until rice has absorbed stock.
- Add cashew nuts, currants, and salt and pepper. Stir until well combined.
