Fig and cranberry granola

Cooking Vegetarian Fig and cranberry granola

Granola goes gourmet with this crispy combo of honey-toasted nuts and fruit.

  1. Preheat oven to 160C. Line a large baking tray with baking paper. Combine oats, almonds, pistachios, coconut and pepitas in a large bowl.
  2. Stir the honey and butter in a small saucepan over medium-low heat for 3-5 minutes or until the butter melts and the mixture is smooth. Pour over the oat mixture. Stir to coat.
  3. Spread oat mixture over prepared tray. Bake, stirring every 5 minutes, for 20 minutes or until golden and crisp. Set aside to cool completely.
  4. Stir in the figs and cranberries. Serve with milk.
