Hasselback potatoes with thyme & garlic

Cooking Vegetarian Hasselback potatoes with thyme & garlic

These flavoursome potatoes are a delicious accompaniment to your festive feast.

  1. Place the potato in a large saucepan of water. Bring to the boil over medium-high heat. Simmer for 20 minutes or until just cooked. Drain and set aside to cool slightly.
  2. Cut 3 slits crossways, about one-quarter to one-third deep, in the top of each potato. Place a sprig of thyme in each slit.
  3. Preheat oven to 200ºC. Combine the butter and oil in a bowl. Place the potato in a single layer, cut-side down, in 1 large or 2 small baking dishes. Arrange the garlic around the potato. Pour over the butter mixture. Roast in oven, brushing with the butter mixture occasionally, for 30 minutes or until golden. Sprinkle with sea salt flakes.
