Potatoes with lemon thyme salt

Cooking Vegetarian Potatoes with lemon thyme salt

No festive feast is complete without crunchy roast potatoes.

  1. Preheat oven to 220°C/200°C fan-forced. Place potato in a large, microwave-safe bowl. Add 2 tablespoons cold water. Cover loosely with plastic wrap. Microwave on HIGH (100%) for 5 minutes or until potato is just tender. Drain. Pat dry with paper towel.
  2. Transfer to a roasting pan. Drizzle with oil. Toss to coat. Season with pepper. Roast for 45 minutes, turning halfway during cooking, or until browned and crisp.
  3. Meanwhile, place salt and thyme in a bowl. Using the back of a spoon, crush mixture to combine. Add salt mixture to potato. Toss to coat. Serve.
