Cooking Vegetarian Crispy royal blue potatoes

Try these delicious potatoes with your next roast.

  1. Preheat oven to 180C or 160C fan-forced.
  2. Steam or microwave potatoes for 5-7 mins, until par-cooked. Transfer potatoes to a baking tray, drizzle with oil and toss to coat. Season well with sea salt and spread over tray in a single layer.
  3. Bake for 1hr 15 mins, turning once, or until golden and crisp.
