Green beans add colour and flavour to this hearty steak and potato salad.
- Cut the potatoes into 1cm-thick slices and boil or steam until tender. Remove from heat and set aside.
- Meanwhile, blanch the beans in a saucepan of boiling water until tender then plunge into iced water. Drain and set aside.
- Heat a stove top grill or barbecue over high heat. Brush the steaks with a little oil and sprinkle with salt and cracked black pepper. Cook steaks for 3 minutes each side or until cooked to your liking. Remove, cover and keep warm.
- Combine the potatoes and pesto and toss to coat evenly. To serve, cut the steak into slices. Arrange potato and spinach leaves on a serving plate, with the beans and steak.
