Green beans add colour and flavour to this hearty steak and potato salad.

  1. Cut the potatoes into 1cm-thick slices and boil or steam until tender. Remove from heat and set aside.
  2. Meanwhile, blanch the beans in a saucepan of boiling water until tender then plunge into iced water. Drain and set aside.
  3. Heat a stove top grill or barbecue over high heat. Brush the steaks with a little oil and sprinkle with salt and cracked black pepper. Cook steaks for 3 minutes each side or until cooked to your liking. Remove, cover and keep warm.
  4. Combine the potatoes and pesto and toss to coat evenly. To serve, cut the steak into slices. Arrange potato and spinach leaves on a serving plate, with the beans and steak.
