Mint adds another layer of freshness to this spicy cauliflower salad.
- Heat the olive oil in a non-stick frying pan over medium-high heat. Add the cauliflower and cook, stirring, for 12 minutes or until golden and just tender. Add the cumin, turmeric and paprika and cook, tossing, for 1 minute or until aromatic. Set aside for 20 minutes to cool.
- Meanwhile, whisk together the orange juice and extra virgin olive oil in a jug until well combined. Season with salt and pepper.
- Add half the orange dressing to cauliflower mixture and toss to combine. Add the mint and pine nuts to the cauliflower mixture and toss to combine. Spoon into serving bowls and drizzle with remaining dressing to serve.
