Cauliflower is a remarkable and underrated vegetable that tastes amazing when roasted.
- Preheat oven to 160C or 140C fan-forced. Cut all leaves from cauliflower. Cut into quarters, then cut each quarter into thick slices. Arrange cauliflower in a single layer on a lightly oiled oven tray.
- Spray with olive oil and sprinkle with cumin and coriander. Spray lightly again and season with salt. Roast for about 30 mins, until tender and lightly golden.
