Cooking Vegetarian Roasted cauliflower

Cauliflower is a remarkable and underrated vegetable that tastes amazing when roasted.

  1. Preheat oven to 160C or 140C fan-forced. Cut all leaves from cauliflower. Cut into quarters, then cut each quarter into thick slices. Arrange cauliflower in a single layer on a lightly oiled oven tray.
  2. Spray with olive oil and sprinkle with cumin and coriander. Spray lightly again and season with salt. Roast for about 30 mins, until tender and lightly golden.
