Add the goodness of greens to your meal with this healthy side of asparagus, peas and spinach.
- Bring a medium saucepan of water to the boil over high heat. Add the asparagus and peas, and cook for 2-3 minutes or until bright green and tender crisp. Refresh under cold running water. Drain.
- Whisk together the lemon juice, oil, mustard and sugar in a small jug. Season with salt and pepper.
- Place the asparagus, peas and spinach in a large serving bowl. Drizzle over the dressing and toss until well combined. Serve immediately.
