The sweet mayo dressing will have everyone coming back for more of this tasty chicken salad.
- Remove skin from chicken, shred meat and discard skin and bones.
- Place fennel and apple in large serving bowl and toss with 2 tablespoons of the lemon juice to prevent browning. Add chicken, onion, parsley and pecans to bowl and toss to combine.
- Whisk mayonnaise, remaining lemon juice, maple syrup, salt and pepper together in a small jug. Drizzle dressing over salad. Serve immediately.
