Peppery rocket and sweet figs are bathed in a tasty walnut oil dressing to create a gourmet salad worthy of any special meal occasion.

  1. Place walnuts in a medium non-stick frying pan over medium heat. Cook, stirring occasionally, for 3 minutes or until toasted (see microwave tip). Remove from heat. Coarsely chop and place in a jug.
  2. Add the olive oil, walnut oil, vinegar and mustard. Use a jug whisk to whisk until combined. Taste and season with sugar and salt.
  3. Place the rocket and fig in a large serving bowl. Pour over the walnut dressing and gently toss to combine. Serve immediately.
