This light Asian-style starter is a new way to serve a dinner-party staple, smoked salmon.
- Spray both sides of 1 wonton wrapper with olive oil spray. Place on a microwave-safe plate. Cook on High/800 watts/100% for 30-40 seconds or until crisp. Cut into strips. Repeat with remaining wontons.
- Whisk together the lime juice, fish sauce, sugar, chilli and mint in a jug.
- Combine carrot, cucumber and snow peas in a bowl. Divide salmon among serving plates. Top with carrot salad and wontons and drizzle over dressing. Serve.
