Stop by the shops on your way home tonight to pick up the ingredients for these quick and easy chicken pancakes.

  1. Finely shred snow peas and thinly slice onions. Place in a bowl. Add sprouts and cucumber. Toss to combine. Place chicken and hoisin sauce in separate bowls.
  2. Heat crepes following packet directions. Place 1 crepe on a plate. Top with one-eighth of the snow pea mixture, chicken and hoisin sauce. Roll up. Secure with a chive. Repeat with remaining crepes, snow pea mixture and hoisin sauce. Serve.
