Noodle omelette

Cooking Appetiziers Noodle omelette

A tasty meal doesnt get easier than wrapping noodles in an omelette.

  1. Combine egg, spring onion and water in a bowl. Heat 1 tsp oil in a wok over medium heat. Add one-quarter of the egg mixture. Swirl to coat. Cook for 2 minutes or until just set. Transfer to a plate. Repeat with remaining oil and egg mixture to make 4 omelettes.
  2. Prepare the noodles following packet directions. Transfer to a bowl. Add cucumber and carrot. Toss to combine.
  3. Divide omelettes among plates. Top with noodle mixture, tomato and spring onion. Fold the omelettes in half.
