Cooking Eggs Microwave ham and tomato omelette

Quick and easy, throw some eggs in the microwave for breakfast in a flash.

  1. Crack eggs into a jug. Add 2 tablespoons cold water. Season with salt and pepper. Whisk to combine. Spray a microwave-safe omelette maker with oil. Divide egg mixture between omelette maker halves.
  2. Microwave, uncovered, on high (100%) for 50 seconds or until almost set. Combine ham, tomato, cheese and parsley in a bowl. Sprinkle three-quarters of the ham mixture over egg mixture. Cook, uncovered, for 30 seconds or until cheese has melted and omelette has set. Flip 1 side of omelette maker over to enclose filling. Slide omelette on to a plate. Sprinkle with remaining ham mixture. Serve.
