Cooking Eggs Eggwhite and corn omelette

Creamed corn is a sweet and creamy filling to these healthy egg white omelettes.

  1. Place eggwhites and corn in a bowl. Season with pepper. Beat lightly with a fork until just combined. Preheat grill on high.
  2. Melt half the butter in a large frying pan over medium-high heat. Pour half the egg mixture into pan. Tilt pan so egg covers base. Cook for 2 minutes or until egg is almost set.
  3. Place pan under grill. Grill until lightly browned. Slide omelette onto plate. Cover to keep warm. Repeat with remaining butter and egg mixture.
  4. Place omelettes on plates. Top with sour cream and dill. Serve.
