Get ready to wok and roll with this speedy stir-fry.
- Heat 1 teaspoon of the oil in a wok or large deep frying pan over medium-high heat. Add half the beef and stir-fry for 2 minutes. Transfer to a plate. Repeat with half the remaining oil and the remaining beef.
- Heat the remaining oil in the wok. Stir-fry the shallot and broccoli stems for 1 minute. Add the broccoli leaves, sauce, cashews and beef. Stir-fry for 1 minute or until the leaves are just tender and the sauce is heated through. Season with pepper.
- Meanwhile, cook the noodles following packet directions. Drain.
- Shape the noodles into 4 nests and divide among serving plates. Divide the stir-fry among the plates.
