Get ready to wok and roll with this speedy stir-fry.

  1. Heat 1 teaspoon of the oil in a wok or large deep frying pan over medium-high heat. Add half the beef and stir-fry for 2 minutes. Transfer to a plate. Repeat with half the remaining oil and the remaining beef.
  2. Heat the remaining oil in the wok. Stir-fry the shallot and broccoli stems for 1 minute. Add the broccoli leaves, sauce, cashews and beef. Stir-fry for 1 minute or until the leaves are just tender and the sauce is heated through. Season with pepper.
  3. Meanwhile, cook the noodles following packet directions. Drain.
  4. Shape the noodles into 4 nests and divide among serving plates. Divide the stir-fry among the plates.
