Quick and healthy this Asian inspired rice noodle and smoked trout meal will have everyone rushing to the table.
- Place the rice noodles in a bowl, cover with boiling water and leave to stand for 5 minutes or until softened. Rinse under cold water and drain well. Place in a large bowl with the spring onion, cucumber, snow peas, coriander leaves and torn mint leaves.
- In a small bowl, whisk the sweet chilli sauce, lime juice, sesame oil and soy sauce until combined. Flake the smoked trout fillets into bite-size pieces, discarding any bones. Add to the salad with the dressing and toss gently to combine.
