Baked apples are an entertainers dream - easy to prepare, sensational presenting to dinner guests and a perfect accompianment to roast meats such as pork with crackling.

  1. Preheat oven to 200C. Cut the tops off the apples about 3cm from stem ends. Reserve apple tops. Using a small spoon, scoop out the apple cores leaving the bottoms intact.
  2. Heat the oil in a medium frying pan over medium heat. Add shallot and chorizo and cook, stirring, for 5 mins or until onion is tender. Add breadcrumbs, sage and lemon rind and cook, stirring, for 1 min or until well combined.
  3. Place apples in a medium baking dish, cut side up. Fill the apples with the chorizo mixture and sprinkle with feta. Replace apple tops. Pour 1/2 cup water into base of the dish. Cover with foil. Bake for 30-35 mins or until apples are tender.
