This flavour-filled rub is great for marinating beef steaks, pork chops and lamb cutlets.
- Place the coriander and cumin seeds in a frying pan over medium heat. Cook, stirring, for 1-2 minutes or until toasted. Set aside for 10 minutes to cool.
- Transfer to a mortar and pound with a pestle until coarsely crushed.
- Combine the coriander mixture, oregano, paprika, salt, garlic powder, cayenne pepper, brown sugar and pepper in an airtight container.
