  1. Place potato in a metal steamer. Place steamer in a large saucepan of simmering water. Cook, covered, for 10 minutes. Add beans. Steam for a further 3 minutes or until just tender. Cool. Slice potato into rounds.
  2. Meanwhile, combine pork, pepper and 2 teaspoons oil in a bowl. Heat a large frying pan over high heat. Cook pork, in batches, for 3 to 5 minutes or until just tender. Transfer to a heatproof bowl. Add herbs, horseradish, vinegar and remaining oil to hot pork in bowl. Toss gently to combine. Season with salt. Cover. Set aside for 15 minutes.
  3. Combine potato, beans, apple and avocado in a bowl. Season with salt and pepper. Serve potato salad with pork and drizzled with dressing.
