- Place potato in a metal steamer. Place steamer in a large saucepan of simmering water. Cook, covered, for 10 minutes. Add beans. Steam for a further 3 minutes or until just tender. Cool. Slice potato into rounds.
- Meanwhile, combine pork, pepper and 2 teaspoons oil in a bowl. Heat a large frying pan over high heat. Cook pork, in batches, for 3 to 5 minutes or until just tender. Transfer to a heatproof bowl. Add herbs, horseradish, vinegar and remaining oil to hot pork in bowl. Toss gently to combine. Season with salt. Cover. Set aside for 15 minutes.
- Combine potato, beans, apple and avocado in a bowl. Season with salt and pepper. Serve potato salad with pork and drizzled with dressing.
