Serve this creamy and flavoursome polenta instead of mashed potato with your next roast.
- Place stock and 1 cup cold water in a saucepan over high heat. Bring to the boil. Reduce heat to medium-low. Add polenta in a slow steady stream, stirring constantly until combined. Cook, stirring, for 8 to 10 minutes or until polenta is smooth and thick. Remove from heat.
- Stir in cream and parmesan. Season with salt and pepper. Swirl through pesto. Serve.
