This quick and easy chicken recipe has a good balance of sweet and sour flavours. Adjust the amount of sugar to your taste.
- Heat oil in a large, deep frying pan on medium-high heat. Cook chicken for 3 minutes each side or until golden. Transfer to a plate.
- Add onion to pan. Cook for 5 minutes or until softened. Add garlic, ginger, cumin and curry powder. Cook for 30 seconds or until fragrant. Add tomato puree, tamarind, sugar and 1/2 cup cold water. Bring to the boil. Return chicken to pan. Reduce heat to medium-low. Cook, covered, for 20 minutes or until chicken is cooked through.
- Add broccoli. Cook, covered, for 5 minutes or until broccoli is tender. Serve chicken with roti and sprinkle with coriander.
