The fresh flavours of mint, coriander and tomato in the couscous salad are the perfect compliment to the Moroccan-seasoned pork.

  1. Heat a barbecue grill or chargrill on medium-high. Rub oil over pork and sprinkle with Moroccan seasoning. Cook on grill for 3-4 mins each side or until just cooked through.
  2. Meanwhile, place the couscous in a heatproof bowl and pour over 1 1/2 cups boiling water. Cover and set aside for 5 mins or until all the liquid is absorbed. Use a fork to separate grains. Cook the beans in a small saucepan of boiling water for 2-3 mins or until just tender. Drain.
  3. Add beans, tomatoes, mint, coriander and dressing to the couscous. Toss to combine. Season. Serve with pork and extra coriander.
