Get glazing with this simple step-by-step recipe for finger-lickin' barbecued bourbon pork ribs.
- Combine the tomato sauce, barbecue sauce, bourbon, sugar, paprika and garlic in a glass or ceramic dish. Add ribs and turn to coat. Cover and marinate in the fridge for 4 hrs or overnight. Remove ribs from the fridge 1 hr before baking.
- Preheat oven to 180C or 160C fan.
- Place potato on a large oven tray. Drizzle with oil and season. Toss to coat and arrange in a single layer. Bake for 1 1/4 hrs or until tender and golden.
- Meanwhile, arrange the ribs in a single layer in a large baking dish. Pour over marinade, reserving 1/2 cup. Cover with foil and bake with the potatoes for 1 hr. Discard foil. Drizzle with reserved marinade and turn to coat. Increase oven to 200˚C or 180˚C fan. Bake for 10-15 mins or until caramelised.
- Boil, microwave or steam corn for 3-5 mins or until tender. Serve ribs with potato wedges, corn and lime wedges.
