Pork and pears are a match made in heaven in this one-tray bake.
- Preheat oven to 200°C or 180°C fan.
- Place vegetables and pears in a roasting pan. Drizzle with 2 tbsp oil and toss to coat. Arrange in a single layer and roast for 20 mins.
- Meanwhile, heat remaining oil in a large heavy-based frying pan over medium-high heat. Trim excess fat from cutlets and season. Cook for 2 mins each side or until golden brown.
- Remove pan from oven and sprinkle with 2 tbsp of sage. Place cutlets on top of vegetables and roast for a further 20 mins for medium rare or until cooked to your liking. Sprinkle with remaining sage.
