Chunky pesto bites

Cooking Vegetarian Chunky pesto bites

These vegetarian pesto bites make clever party pieces for even the most demanding crowd.

  1. Place dip, ricotta and parsley in a bowl. Stir until well combined.
  2. Preheat oven to 180?C/160?C fan-forced. Line 1 large baking tray with baking paper. Place 1 sheet filo on a flat surface. Spray with oil. Top with 1 sheet filo. Repeat layering with 4 sheets filo. Leaving a 1cm border on 1 long side, spread ricotta mixture over filo. Sprinkle with breadcrumbs. Starting at opposite side to border, roll up like a Swiss roll. Trim ends. Cut into 20 even slices. Place on prepared tray.
  3. Spray rounds with oil. Top with parmesan and season with pepper. Bake for 15 minutes or until golden. Serve.
