Cooking Vegetarian Grilled zucchini and goats cheese bites

Go traditional this Christmas with these grilled zucchini and goats cheese bites.

  1. Spray a chargrill pan with oil. Heat over medium-high heat. Cook zucchini, in batches, for 1 to 2 minutes until lightly charred and tender. Transfer to a plate. Set aside to cool.
  2. Combine cheese, mint and milk in a small bowl. Season with salt and pepper. Spread 1 side of each slice of zucchini with cheese mixture. Roll up tightly. Secure with a toothpick. Refrigerate until ready to serve.
