Cooking Vegetarian Watercress and chive couscous

This couscous recipe makes for a fresh and interesting accompaniment to both meat and vegetarian meals.

  1. Place couscous in a heatproof bowl. Add boiling water. Stand, covered, for 5 minutes or until water is absorbed. Stir with a fork to separate grains. Cool for 5 minutes.
  2. Meanwhile, place watercress, chives, garlic, mustard, vinegar and oil in a bowl. Stir to combine. Add to couscous. Season with salt and pepper. Stir to combine. Serve.
