Gnocchi with sage brown butter and rocket (vegetarian)

Cooking Vegetarian Gnocchi with sage brown butter and rocket (vegetarian)

This simple gnocchi packs a punch of flavour in every bite.

  1. Cook the gnocchi in a large saucepan of boiling salted water according to packet instructions, then drain.
  2. Meanwhile, cook the butter in a large frypan over medium heat for 5 minutes or until golden brown. Add the sage and stir for 30 seconds, then gently stir the cooked gnocchi through the butter.
  3. Divide the rocket among the serving bowls and top with the gnocchi, tomato and grated parmesan.
