Cooking Vegetarian Gnocchi with broccoli and lemon

Keep it simple with this lemon gnocchi dish, sprinkled with freshly grated parmesan.

  1. Blanch gnocchi in a large saucepan of boiling water. Drain and refresh in iced water.
  2. Heat half the butter in a large frying pan on high. Cook gnocchi for 3-4 minutes stirring. Reduce heat to medium.
  3. Heat remaining butter in pan and add the broccoli. Cook, stirring, for 4-5 minutes.
  4. Add lemon juice and half the parmesan. Season to taste. Serve topped with remaining parmesan and with a lemon wedge on the side. If you like, you could also sprinkle over a little chopped parsley.
