High in vitamin C and with a range of antioxidants, the humble garlic clove adds more to this simple one-pan side than just flavour! Plus, its ready in just 20 minutes.
- Heat butter and oil in a large frying pan over medium-high heat. Add garlic. Cook, stirring, for 1 minute or until fragrant.
- Add mushrooms. Cook, stirring occasionally, for 4 to 5 minutes or until mushrooms are golden and tender. Add parsley, chives and 1/2 of the lemon zest. Toss gently to combine. Season well with salt and pepper.
- Serve mushrooms sprinkled with remaining lemon zest.
