- Cook SunRice Naturally Rice & Quinoa following packet directions.
- Meanwhile, cook broccoli in a small saucepan of boiling salted water for 2-3 minutes or until just tender. Drain well.
- Heat oil in a large saucepan over medium heat. Cook garlic for 4-5 minutes or until golden. Increase heat to medium-high and cook kale, stirring, for 1-2 minutes or until bright green. Season and add vinegar. Toss and remove from the heat. Toss through rice mixture.
- Serve warm or at room temperature topped with broccoli, cottage cheese, almonds and chives.
