Cooking Vegetarian Superfood bowl

This speedy vegetarian dinner is filled with healthy superfoods such as kale, broccoli and almonds. Proudly brought to you by SunRice and wowfood.guru.

  1. Cook SunRice Naturally Rice & Quinoa following packet directions.
  2. Meanwhile, cook broccoli in a small saucepan of boiling salted water for 2-3 minutes or until just tender. Drain well.
  3. Heat oil in a large saucepan over medium heat. Cook garlic for 4-5 minutes or until golden. Increase heat to medium-high and cook kale, stirring, for 1-2 minutes or until bright green. Season and add vinegar. Toss and remove from the heat. Toss through rice mixture.
  4. Serve warm or at room temperature topped with broccoli, cottage cheese, almonds and chives.
