  1. Place 1 whole orange into a saucepan. Cover with cold water. Bring to the boil. Reduce heat to medium-low. Simmer, covered, for 30 to 45 minutes or until soft. Drain. Allow orange to cool. Roughly chop orange (including skin and seeds). Place into the bowl of a food processor. Process until finely chopped. You will need 3/4 cup of orange pulp.
  2. Preheat oven to 200°C. Grease 12 x 1/2-cup capacity friand moulds or 12 x 1/2-cup capacity muffin pans. Place onto a baking tray.
  3. Combine icing sugar, flour and almonds in a large bowl. Add orange pulp and butter. Stir until well combined.
  4. Using a fork, whisk eggwhites and vanilla in a jug until frothy. Add to flour mixture. Stir until combined. Spoon evenly into moulds. Bake for 15 to 18 minutes or until small peaks form and a skewer inserted into the centre comes out clean. Stand for 3 minutes in moulds. Turn out onto a wire rack to cool completely.
  5. Zest rind from remaining 2 oranges then juice. Place zest, juice and sugar into a small saucepan. Cook over low heat, stirring, for 5 minutes or until mixture comes to the boil. Reduce heat to low. Simmer for 5 minutes or until mixture thickens slightly. Allow to cool.
  6. Place friands onto serving plates. Drizzle with orange syrup and serve.
