Stuffed cherry tomatoes

Cooking Vegetarian Stuffed cherry tomatoes

Cherry tomatoes make cute little holders for this cheesy filling.

  1. Cut tomatoes in half. Use a teaspoon to scoop the flesh from each tomato half.
  2. Combine celery stick, carrot, capsicum and cream cheese, softened, in a small bowl. Spoon the cream cheese mixture among the tomato shells. Sprinkle with alfalfa sprouts.
