Lemon & thyme polenta

Cooking Vegetarian Lemon & thyme polenta

Lemon enhances the flavour of the polenta in this tasty side dish.

  1. Combine the water and stock cube in a large saucepan and bring to the boil over high heat. Gradually add the polenta in a thin steady stream, stirring constantly with a wooden spoon for 3-5 minutes or until polenta thickens. Remove from heat.
  2. Quickly stir in the butter, thyme, lemon rind and lemon juice. Taste and season with salt and pepper. Divide the polenta among serving plates. Top with the vegetable ratatouille and serve immediately.
