Cooking Vegetarian Braised red cabbage with apples

  1. Heat the oil and butter in a large saucepan over medium heat. Cook the onion and apple, stirring, for 5 minutes or until golden. Add the cabbage and wine. Simmer for 3 minutes or until reduced. Stir in the thyme.
  2. Reduce heat to low. Cover. Simmer, stirring, for 15-20 minutes or until tender. Stir in redcurrant jelly until melted.
