Cooking Vegetarian Chunky coleslaw

Cutting the vegetables into larger ribbons means that coleslaw gets added crunch and the individual flavours of the vegetables can be appreciated.

  1. Cut cabbage leaves into 3cm pieces. Cut carrot ribbons into thirds crossways. Combine cabbage, carrot, onion and parsley in a bowl.
  2. Place mayonnaise and lemon juice in a bowl. Stir until smooth. Pour over cabbage mixture. Toss to combine. Serve.
