Creating beautiful, elegant starters neednt cost a fortune or take hours to prepare - make a batch of these beautiful corn fritters in a flash!
- Preheat oven to 150°C. Place a wire rack over a baking tray lined with paper towel. Combine vinegar and extra-virgin olive oil in a small jug. Season with salt and pepper. Set aside.
- Sift flour, nutmeg and paprika into a bowl. Season with salt and pepper. Make a well in the centre. Add mineral water and egg. Whisk until a smooth batter forms. Add corn, onions, dill, mint, capsicum and chilli. Stir gently to combine.
- Add butter and enough vegetable oil to a large non-stick frying pan to cover base. Heat over medium heat. Using 1/4 cup mixture per fritter, spoon mixture, 3 fritters at a time, into hot oil mixture. Cook for 4 to 5 minutes each side or until golden and cooked through. Transfer to wire rack. Keep warm in oven while cooking remaining fritters. Place fritters on plates. Top with rocket. Drizzle with balsamic dressing and serve with bread.
