Put some bite into this fresh green salad with spiced pumpkin seeds.

  1. Preheat oven to 180ºC. Line a baking tray with non-stick baking paper. Place pepitas, oil and Cajun seasoning in a bowl and toss to coat. Spread over the prepared tray and bake for 6-8 minutes or until lightly browned. Set aside to cool slightly.
  2. Combine the lemon or lime juice, garlic and extra oil in a small bowl. Season with salt and pepper. Place the salad leaves, avocado, cucumber, onion, celery and pepitas in a large bowl. Drizzle with the dressing and gently toss to combine.
