This vegetarian salad is a colourful and tasty way to enjoy watermelon – the feta pairs perfectly with the charred watermelon and red onion.
- Heat a lightly oiled chargrill on high heat. Cook the watermelon for 1 minute each side or until lightly charred. Transfer to a plate. Add red onion to the grill. Spray with oil. Cook, turning, for 10 minutes or until charred.
- Combine the extra virgin olive oil and vinegar in a small jug. Season with pepper.
- Arrange the watermelon, onion, feta, pistachio and parsley on a plate. Drizzle with the dressing.
