For a hearty vegetarian dish, look no further than this lentil with spiced onions and vegetable salad.
- Place lentils in a heavy-based saucepan with water. Cover. Bring to the boil. Skim froth from top of water and discard. Reduce heat to medium-low and simmer, uncovered, for 25 minutes. Remove from heat. Stir in burghul. Cover and set aside.
- Meanwhile, heat oil in a frying pan over high heat. Add onion. Cook for 5 minutes or until soft. Add onion to lentil mixture. Mix to combine. (If consistency is too watery, add more burghul.)
- Make spiced onions: Combine ingredients in a bowl. Season with pepper.
- Make vegetable salad: Combine ingredients and 1/2 teaspoon salt in a bowl.
- Spoon lentils onto plates. Serve with spiced onions and vegetable salad.
