Heres a hearty vegetarian soup to warm up your insides and fill you up!
- Heat oil in a large saucepan over medium heat. Add onion. Cook for 5 minutes or until softened. Add cumin and chilli. Cook for 1 minute or until fragrant. Add carrot. Cook, stirring occasionally, for 5 minutes. Add zucchini, lentils, stock powder, coconut milk and 5 cups cold water. Bring to the boil. Reduce heat to low. Simmer for 40 minutes or until vegetables and lentils are tender. Serve.
