The taste of summer! This curried chicken and peach salad is fresh, zesty and has just the right amount of spice. Try cooking it on the barbecue to really get into the summer spirit!
- In a bowl combine chicken, oil and spice. Toss to coat chicken well.
- Heat a large frying pan or barbecue on medium heat. Cook chicken 5-7 minutes each side, until cooked through. Rest, covered, 5 minutes.
- Meanwhile, microwave each pappadum on high (100% power) for 45 seconds, until puffed and crisp.
- On a large platter combine peach, avocado, onion, coriander and chilli. Drizzle with juice and season to taste with salt and pepper. Toss gently.
- Thinly slice chicken breast. Fan over salad. Serve with pappadums and lime wedges.
